• 500g type 2 flour
  • 250ml lukewarm water
  • 1 teaspoon salt
  • 1 teaspoon extra virgin olive oil


  1. Start by preparing the dough for the tigelle: in a large bowl, mix 500g type 2 flour, 250ml lukewarm water, 1 teaspoon salt and 1 teaspoon extra virgin olive oil. Mix the ingredients well to form a smooth, homogeneous dough.
  2. Cover the dough with a cloth and let it rest for at least 30 minutes.
  3. After resting, knead the dough again for a few minutes and then divide it into small portions, forming small balls.
  4. Using a rolling pin, roll out each portion of dough into thin, regular tigelle.
  5. Take a baking tray and place one tigella at a time.
  6. Spread your favourite batter or your favourite products and enjoy your tigella still warm!
