Today we want to tell you about our cultivated mushrooms 'Le Italiane'.

A historical curiosity: when we started producing them 50 years ago, their cultivation took place in the quarries built by soldiers during the Second World War to shelter and hide their weapons.

The reason for this strange 'location' is the temperature: this type of mushroom has to grow in places with a cool and stable temperature, which is why we decided to cultivate in quarries at the time.

In these photos you can see the mushrooms after being picked, ready to be brought to the farm, cleaned, cooked and preserved in oil according to the traditional recipe.
