  • Guanciale (pork cheek) 
  • Pepper
  • Pecorino cheese 


  1. Cook the guanciale on a high flame and in the meantime knife our small artichokes in olive oil. 
  2. Once the pasta is cooked, toss it in the pan with the guanciale and artichokes. 
  3. Serve with a sprinkling of Pecorino Romano cheese, a pinch of pepper and an artichoke in olive oil!
